Winter Lentil Soup

It’s been a long winter. They always are. Long and dark. The darkness is probably the most challenging thing about living in Ireland, but it also makes us appreciate the light.

This soup is one of our latest favorites at home. When bubbling on the stove, hints of flavors from onions, carrots, cumin, curry and cinnamon fills the kitchen. And as you dig in you will immediately be struck by its creaminess, which is enhanced by the lentils.

Lentils are a great legume for a quick and easy meal because they cook in a very short amount of time and require no pre-soaking like other pulses do. They have a velvety texture and delicate flavour – perfect for purées and soups. They are low in calories, virtually fat free, but very filling because of their high fiber content.

In addition to providing the body with slow burning complex carbohydrates, lentils can increase your energy by replenishing your iron stores. They are one of the yummiest sources of folate (also know as folic acid) – just one cup of cooked lentils provides you with almost 90% of your daily recommended intake! Folate functions to support red blood cell production, helps prevent anemia and allows nerves to function properly.

This soup is a real crowd pleaser that will warm the hearts of anyone you serve it to, most importantly, yourself! It comes together in a snap yet is deeply flavorful. Just the thing for a cold night.

Winter Lentil Soup

Vegan & Gluten-free
Serves 4

Ingredients:

  • 1 Tbsp. coconut oil
  • 1 medium yellow onion, diced
  • 2 tsp. cumin
  • 2 tsp. curry powder
  • 1 tsp. cinnamon
  • 2 garlic cloves, minced
  • 2 Tbsp. fresh ginger, minced
  • 4 carrots, diced
  • 4 cups vegetable broth
  • 1 cup red lentils (I used red split lentils)
  • dash of cayenne pepper
  • salt and pepper to taste

Directions:

  1. Add the coconut oil to a pot over medium heat.  Add the yellow onion and sauté for five minutes, until translucent.
  2. Add the cumin, curry powder, cinnamon, garlic, ginger, and carrots and sauté for an additional 2 minutes.  Add the vegetable broth, lentils, and cayenne pepper and bring to a boil.
  3. Simmer, covered, for 30 minutes, or until the lentils are tender. (If too much of the liquid has evaporated, you can add more vegetable broth or water).
  4. Use an immersion blender or high speed blender to achieve smooth consistency, if so desired. It also makes for a nice chunky soup. Add salt and pepper to taste and serve hot.

Grapefruit, Lime & Ginger Juice

Happy New Year, dear readers! I hope you all had a delightful holiday filled with love and tummies filled with delicious food! Mine was slow and relaxing, with plenty of time for cooking, playing and reflections. Over the break, I came up with some new year’s goals and I thought it might be fun to share them with you. I hope that this inspires you create your own list!

  1. Consume more fresh pressed juices.
  2. Eat a greater variety of fruits and vegetables.
  3. Compete in a triathlon.
  4. Volunteer in the community.
  5. Live every day fully.

If one of your resolutions is eating healthier in the new year, this juice is a good tasty place to start. Kick things off with this beauty – a lovely pink, citrus-centric Grapefruit, Lime & Ginger Juice. This detoxifying and immunity-boosting juice recipe is easy to embrace post-holiday! It packs such a fresh punch of citrus and ginger flavor that you won’t feel you’re missing out on a thing. And by providing your immune system with a strong dose of vitamin C you’ll be putting yourself in the right frame of mind to embrace the new year in health.

Grapefruit, Lime & Ginger Juice

Serves 1

Ingredients:

  • 1 grapefruit, peeled (I used ruby red)
  • 2 apples
  • 1 stalk of celery
  • 1/2 lime, peeled
  • 1/4 inch knob of ginger
  • fresh mint (optional)
  • sparkling water (optional)

Directions:

  1. Place grapefruit, apple, celery, lime, and ginger through juicer.
  2. Pour fresh juice into a glass and garnish with a sprig of fresh mint. Enjoy.

This juice is quite strong – but invigorating! And if you like, you could even add a splash of sparkling water.

Gourmet Popsicles

Gourmet popsicles are making their way as the newest food rage. You can see evidence of that in some way in just about every food publication you pick up, on any food show on television and all over the internet. There is hardly a specialty food market, farmer’s market or food truck anywhere that does not have some representation of these handcrafted, gourmet frozen confections. And why not? They are fun, creative, and in most cases, a healthy option to some of the overly sweetened, processed frozen treats that have been making the scene for years.

Ever since we browsed the People’s Pops stall at the Brooklyn Flea Market, I starting gathering a little inspiration for my own homemade artisan popsicles. We purchased fruit from farmer’s markets and condensed it into the form of a simple and nostalgic summertime staple. With temperatures reaching  over 90 degrees while visiting NYC, the popsicles we made at my sister’s apartment were the perfect antidote to the heat — if only for a few minutes.

Ginger Tea Cherry Popsicles

Ingredients:

  • 1.5 cups hot water
  • 2 ginger tea bags
  • 1 Tbsp. agave nectar, or sweetener of choice
  • a pinch of salt
  • 1 cup of pitted cherries (I used sour cherries)
  • 1 Tbsp. lemon juice

Directions:

  1. Steep ginger tea bags in hot water for 5 minutes.
  2. Discard tea bags and stir in agave nectar. Set aside to cool.
  3. Add lemon juice and salt. Stir to combine.
  4. Pour the ginger tea concoction into popsicle trays and add cherries. Freeze completely (4-5 hours).
  5. To un-mold, place popsicle trays under running hot water for a few seconds.

Almond Pear Popsicles

Ingredients:

  • 1.5 cups almond milk
  • 1 pear, sliced
  • ½ tsp. almond extract
  • 1 Tbsp. agave nectar, or sweetener of choice
  • Pinch of cinnamon

Directions:

  1. Place almond milk into a small bowl. Stir in almond extract, agave nectar and cinnamon.
  2. Pour mixture into popsicle trays and add pear slices. Freeze until set (4-5 hours).
  3. To un-mold, place popsicle trays under running hot water for a few seconds.

Enjoy!

Heart Beet Juice

With spring cleaning in full bloom and summer right around the corner, what better time than now to rid your body of toxins and impurities? I don’t know what it is about spring, but it makes me want to clean everything and start fresh. Then it got me thinking, shouldn’t I be detoxing my body too? That was when all of the crazy juicing started.

This wonder elixir has many beneficial properties including detoxifying the liver and kidneys and lowering inflammation. The mixture of beetroot, apple, pear, ginger and lemon is chock full of phytonutrients, carontenoids and antioxidants, which pack a powerful punch of nutrition.

Beets are rich in dietary fiber, vitamin C, magnesium, iron, copper and phosphorus. They are a natural detoxifier and blood purifier. Beetroot is also rich in a variety of nutrients that are important for the immune system to work with full efficiency – as beets encourage the production of antibodies that fight against disease or infection inside our body. Beetroot is also rich in iron and that is why it boosts red blood cells with required iron and facilitates the supply of oxygen towards the cells making our body healthy and young.

Heart Beet Juice

Serves 1

Ingredients:

  • 1 beetroot
  • 2 apples
  • 1 pear
  • thin slice of ginger
  • juice of 1/2 lemon

Directions:

  1. Place all ingredients in juicer and drink immediately.
  2. You can add less or more of anything depending on your taste.
