Caramelized Pear & Hazelnut Porridge

You might not have guessed it from reading this blog, but I get into a routine with recipes that I make for us at home. I will get stuck eating the same thing over and over, for breakfast especially. It is usually a green smoothie or some toast and a fruit bowl. I’ve been trying to break it up by doing something different one or two days out of the week.

Recently I decided I was going to make some porridge. You see, believe it or not I never had a bowl of porridge before moving to Europe. I was always a cold cereal kind of gal. I’ve been missing out. Porridge is super easy to make and also an easy way to switch up my routine.

I have never seen or made a fancy porridge, so I thought, why not. There is no reason simple ole porridge cannot get fancy. In this recipe, pears are caramelized lightly and infused with cinnamon and nutmeg which takes basic porridge to a heavenly level. It is then topped with warmed hazelnuts and maple syrup just before serving.

This porridge helped break up my morning recipe routine, and then some. Because it is good to break up the routine once in a while.

Caramelized Pear & Hazelnut Porridge

Vegan & Gluten-free

Serves 1

Ingredients:

  • 1 Tbsp. coconut oil
  • 1 pear, sliced
  • 1 Tbsp. hazelnuts
  • dash of cinnamon and nutmeg
  • 1/2 cup fine rolled oats (I used organic gluten-free)
  • 1 cup water
  • 1/2 tsp. vanilla extract
  • maple syrup or honey, if desired

Directions:

  1. In a small pan over medium heat add the coconut oil and pear. Sauté the pears until they are soft and caramelized. When they start to brown, add the hazelnuts, cinnamon and nutmeg. Cook for another 2 minutes. Remove from the heat and cover to keep warm.
  2. Place oats, water and vanilla in a saucepan over medium high heat and stir gently until the porridge has thickened – about 5 minutes.
  3. Spoon the prepared porridge into a bowl and pour the pears and hazelnuts on top. Serve with a drizzle of honey or maple syrup if desired.

Gourmet Popsicles

Gourmet popsicles are making their way as the newest food rage. You can see evidence of that in some way in just about every food publication you pick up, on any food show on television and all over the internet. There is hardly a specialty food market, farmer’s market or food truck anywhere that does not have some representation of these handcrafted, gourmet frozen confections. And why not? They are fun, creative, and in most cases, a healthy option to some of the overly sweetened, processed frozen treats that have been making the scene for years.

Ever since we browsed the People’s Pops stall at the Brooklyn Flea Market, I starting gathering a little inspiration for my own homemade artisan popsicles. We purchased fruit from farmer’s markets and condensed it into the form of a simple and nostalgic summertime staple. With temperatures reaching  over 90 degrees while visiting NYC, the popsicles we made at my sister’s apartment were the perfect antidote to the heat — if only for a few minutes.

Ginger Tea Cherry Popsicles

Ingredients:

  • 1.5 cups hot water
  • 2 ginger tea bags
  • 1 Tbsp. agave nectar, or sweetener of choice
  • a pinch of salt
  • 1 cup of pitted cherries (I used sour cherries)
  • 1 Tbsp. lemon juice

Directions:

  1. Steep ginger tea bags in hot water for 5 minutes.
  2. Discard tea bags and stir in agave nectar. Set aside to cool.
  3. Add lemon juice and salt. Stir to combine.
  4. Pour the ginger tea concoction into popsicle trays and add cherries. Freeze completely (4-5 hours).
  5. To un-mold, place popsicle trays under running hot water for a few seconds.

Almond Pear Popsicles

Ingredients:

  • 1.5 cups almond milk
  • 1 pear, sliced
  • ½ tsp. almond extract
  • 1 Tbsp. agave nectar, or sweetener of choice
  • Pinch of cinnamon

Directions:

  1. Place almond milk into a small bowl. Stir in almond extract, agave nectar and cinnamon.
  2. Pour mixture into popsicle trays and add pear slices. Freeze until set (4-5 hours).
  3. To un-mold, place popsicle trays under running hot water for a few seconds.

Orange Dream Juice

I am taking a bit of a break this week.. a break from food, that is. Today I’m embarking on a three day juice cleanse. As today marks the first day into the program, I thought it would be fitting to share a juice recipe.

This juice tastes surprisingly like a Dreamsicle. Those frozen orange flavored ice-cream filled popsicles were a childhood favorite of mine. The juice is a better alternative because its fresh, healthy and totally delicious. Whats the secret ingredient is this juice? Sweet potato! It adds a delightful creaminess to the mixture.

This wonder elixir has many beneficial properties including detoxifying the liver and lowering inflammation. The mixture of carrot, orange, pear and sweet potato is chock full of phytonutrients, carontenoids and antioxidants, which pack a powerful punch of nutrition. Carrot juice has been demonstrated to rapidly alkalize the body and cleanse the liver and improve the quality of the blood. With 116% of the daily recommended amount of Vitamin C in just one orange, oranges are a great way of boosting the immune system.

Go ahead, treat yourself to this sweet and refreshing juice.

Orange Dream

Serves 1-2

Ingredients:

  • 2 carrots
  • 3-4 oranges, peeled
  • 2-3 pears
  • 1 medium sweet potato

Directions:

  1. Place everything in the juicer and juice away.
